So Far…
In 2009 the idea was to open a place that felt like home, We set out to create a dining pub, one we wanted to eat in, the style of food Aidan liked to cook. We achieved this and much more. In 2018 Aidan won a Michelin Star for his pub dining, which he retained for eight years. In 2024 we revised things, we stopped serving dinner. We changed focus to our antique filled 4 Star Guesthouse. A place where the service is first class and the feel is relaxed and unfussy. We look forward to welcoming you to WHI
Kate
A large part of the ‘country chic’ style and welcoming atmosphere of Wild Honey Inn is due to Kate – whose care and attention to detail really makes for a great stay. Kate entered the hospitality industry many years back from an accounting background; she also has a BA Hons degree in English, Media & Communication. Kate looks after the Inn’s front-of-house, overseeing its day-to-day running, food service and everything else in between. Kate loves the variety involved in running the Inn and the people she gets to meet – and along with her assistants, are happy to help in any way she can to make your stay as enjoyable as possible.
Aidan
It has been Aidan’s ambition for quite some time to promote and raise the standard of pub dining in Ireland. And his hard work and determination has not gone unnoticed.
Aidan won a Michelin Star for his robust and confident cooking in the Michelin Guide, Great Britain and Ireland 2018 which he retained for eight years. In 2024 after cooking at a high-level for 45 years, Aidan stopped serving dinner at WHI. Wild Honey Inn was the first pub to be awarded a Michelin Star for food in Ireland and currently is the only pub ever to have achieved this accolade in Ireland.
